Niall Davidson, head chef and owner of allta, will soon welcome four lucky competition winners into his spectacular Dublin restaurant.
At the recent launch of the new BMW X3 in Ireland, customers and friends of the brand got the chance to sample the delights and delicacies of allta restaurant in the Grand Canal Dock district of Dublin. Owner and head chef Niall Davidson has been working with BMW for two years now and the relationship goes a lot deeper than using the restaurant as a stylish venue to launch new models:
“We’re working together because of shared values in terms of circularity and sustainability. Although one is a restaurant and one a car company, we still share quite a lot of core principles in how we operate. For allta, a big thing is our no waste policy in terms of how we deal with our suppliers, using vegetables and whole animals.”
Niall gives us an example of how this can still translate into delicious food:
“We’ve got a cool thing going on now where we take any potato waste, ferment it and turn it into burger buns for our bar.”
In October, guests of BMW got to experience some of Niall’s creations for themselves in allta while being among the first in the country to get up close and personal with the fourth-generation X3, stylishly displayed in a glass box.
This iteration of the popular SUV features more recycled and recyclable content than its predecessors and pays particular attention to sustainable materials used throughout, including synthetic leather upholstery.
Niall relished the chance to engage with BMW’s customers and showcase the restaurant’s ability, and he reckons allta’s approach is reflected in the X3: “You can clearly do style and luxury alongside sustainability in this day and age. You can do both. And that’s kind of key to our philosophy.”
Not that Niall and his team are sitting on their laurels. Just as BMW continues to push forward with innovative solutions, allta is expanding, though on a small scale. Niall lets us in on his plans to open a “test kitchen” around the corner from allta: “The idea there is to push our creativity and our food to an even higher level.”
Those tantalised by allta’s charms will be thrilled to hear BMW is running a competition that will allow winners to experience a meal for four in the critically acclaimed restaurant.
